Native to the hot climates of the Middle East and Mediterranean, pistachio nuts have long been enjoyed and treasured for their unique flavour and versatility. Like almonds, these nuts are the seeds of softer fruit that grow in clusters on trees in early autumn. When ready the rosy coloured fruit opens to reveal a tough pod that naturally splits down one seam at peak ripeness. Inside awaits the vibrant greenish-yellow nut with it’s delicate purple and pink skin. But their beauty isn’t just skin deep!
Pistachios contain complete proteins, which makes them one of the rare vegan food sources for all 9 essential amino acids that our bodies can’t produce themselves! A portion of 49-50 of these gorgeous nuts provides around 6 grains of complete protein - about the same as a large egg.
They are rich in antioxidants, and you can actually SEE some of their nutrition in their vibrant colours! The green and yellow colour of the actual nut comes from the carotenoids: lutein and zeaxanthin. The purple skin surrounding the nut is loaded with anthocyanins, the same type of antioxidants found in grapes and cranberries. Pistachios are also a good source of vitamin B6, phosphorus, and thiamin, and an excellent source of copper and potassium. Pistachios also have the highest phytosterol content (61 grams per 28 gram serving) among nuts, which can help lower blood cholesterol levels. Pistachio nuts are high in fibre which helps regulate digestion and stabilise blood sugar levels. Multiple studies have also shown that eating some pistachios every day for a month can actually help to lower systolic blood pressure.
